●½ cup coconut flour
●1 tablespoon butter, melted
●4 pecans, chopped
●1 tablespoon Monk fruit powder
●4 oz coconut milk
●2 tablespoons almond butter
●1 cup water, for cooking
Directions

Make the pie crust: mix up together coconut flour and butter. Knead the non-sticky dough. Place the mixture in the instant pot mold and flatten it with the help of the fingertips in the shape of the pie crust. Pour water and insert the steamer rack in the instant pot. Place the mold with the pie crust on the rack and close the lid. Cook it on manual (high pressure) for 5 minutes. Then make a quick pressure release. Open the lid. In the mixing bowl whisk together milk, Monk fruit, and almond butter. When the mixture is smooth, pour it over the cooked pie crust. Top the pie with chopped pecans and close the lid. Cook the pecan pie for 10 minutes on manual mode (high pressure). When the time is over, make a quick pressure release. Cool the cooked pie well.
