Crispy fried whitebait

300 g (10½ oz) whitebait
2 tablespoons plain (all-purpose) flour
vegetable oil, for deep-frying
1 teaspoon sea salt flakes, plus extra for sprinkling
lemon wedges, for serving
Coat the whitebait in flour and deep-fry in small batches using the instructions.
