This is one of the best uses for your homemade pastrami. It’s a great sandwich for late poker nights, easy to make and eat and also great with beer.
40 g (1½ oz) butter
8 slices rye bread
8 slices gruyère cheese
350 g (12 oz) thinly sliced pastrami
250 g (9 oz) sauerkraut
½ cup Russian dressing (below)
RUSSIAN DRESSING
85 g (3 oz/1/3 cup) mayonnaise
1½ tablespoons Grandpa Steve’s tomato sauce (ketchup)
1½ teaspoons grated fresh horseradish (or horseradish in a jar but not horseradish cream)
½ teaspoon worcestershire sauce
To make the Russian dressing, combine all of the ingredients in a bowl then season with sea salt and freshly ground black pepper. Set aside.
This sandwich is assembled before you cook it. Butter one side of four slices of the bread, and place the slices, butter side down. Top each with a slice of gruyère cheese and then divide half of the pastrami among them. Squeeze out any excess moisture from the sauerkraut using kitchen paper. Divide the sauerkraut among the sandwiches, and top each one with a tablespoon of the Russian dressing. Add another layer of pastrami and a second slice of gruyère. Butter the remaining bread and place on top, butter side up.
Warm up a frying pan or barbecue hotplate and start to cook the sandwiches until they are golden brown, flipping them with a spatula to cook both sides. Cut each sandwich in half and serve hot.
