PLANTAINS—those savory, starchy fruits that look like big bananas—have become another sneaky starch that is appearing more often in health food markets these days as an alternative flour. It also happens to make an excellent pizza base! Plantains are super versatile—they can be made into waffles, muffins, and cookies (see my recipe for chocolate chip cookies made with plantains here). But if you’ve got a pizza itch to scratch and you’ve never tried plantains, let this be your first plantain experiment. Your health and your family’s well-being is worth trying something new! It really is simple to do, so don’t get scared off by a new ingredient. It just takes a few steps; take your time and see what happens. I promise you will be happy you did. ⅓ cup olive oil
½ cup water
2 cups cubed peeled green plantains (not the black sweet ones—look for the green ones, which are savory), from about 2 large plantains
1 cup cassava flour
1 cup arrowroot starch
1 teaspoon garlic powder
1 teaspoon onion flakes
1 teaspoon dried parsley
Toppings of choice (see the box here for some ideas)
Preheat the oven to 400°F. Line a baking sheet with parchment paper.
In a high-speed blender, combine the olive oil and water first, then the plantains, flour, starch, garlic powder, onion flakes, and parsley. Start on slow speed and gradually work the ingredients together, eventually increasing to high speed until a dough-like consistency forms.
Transfer the dough to the lined baking sheet and press out a round or square shape, about ¼ inch thick. Bake for 20 minutes. Flip the crust using a spatula (or two), and bake for another 5 minutes, until the crust feels firm.
Remove from the oven and add your toppings of choice. Bake for another 5 minutes, until the toppings are warmed through, if desired. Or, if you want to really brown the toppings, put them under the broiler for 5 minutes.
