Now for my favorite part—baking with gluten-free flours. While I am grateful and amazed at what good results I can get from grain-free baking, I also really enjoy baking with gluten-free grains. This is its own kind of challenge, and I have been working on perfecting the art for years now. This is a collection of some of my favorite everyday treats, from pancakes to cupcakes. Have fun with this part, just don’t overdo it. You can sweeten your life with the treats, but too much grain can be a burden, so keep it light and make it special.
