Sun Butter–Honey–Banana Sandwich

Makes 2 sandwiches

THIS IS A GROWN-UP, allergen-free version of that kid favorite, the peanut butter–honey–banana sandwich. Instead, this uses sun butter, which is a nice name for sunflower seed butter. Many people who are allergic to nuts and/or peanuts are not allergic to seeds, and so can tolerate sun butter. Try this rich, delicious, lip-smacking sandwich and revel in a meal you can prepare in less than 2 minutes if you already have Raisin Pecan Bread sitting around.

4 slices Raisin Pecan Bread (here)

1 banana, sliced

Sun butter

2 tablespoons raw honey

Place 2 slices of bread on a plate. Smear as much sun butter as you like on each slice. Arrange the banana slices on the two slices and drizzle each with 1 tablespoon honey. Finish off with a second slice of bread, and enjoy your meal-in-no-time.
