NORMALLY I don’t use any cane sugar, but in this recipe, organic evaporated cane juice works better than any other kind of sugar to make a light fluffy powdered sugar you can use for icing and frosting. Make a batch and keep it in an airtight container in the refrigerator. It will last for months.
2 cups organic evaporated cane juice
1 cup tapioca starch
Mix the sugar and starch together in a food processor, pulsing until you have a fine powder.
