Serves 4 to 6
4 apples, peeled, cored and quartered
1 T. butter
1 T. all-purpose flour
1 c. brown sugar, packed
1 c. boiling water
1-1/2 c. mini marshmallows
1 t. vanilla extract
Arrange apples in a buttered 2-quart casserole dish; set aside. Melt butter in a saucepan over low heat; blend in flour. Add brown sugar and water; cook until sugar dissolves. Stir in marshmallows until melted; bring to a boil. Pour mixture over apples. Bake, uncovered, at 350 degrees for 25 to 30 minutes, basting occasionally with sauce.
