1 loaf French bread, cubed
16-oz. can sliced peaches, drained
1/2 c. raisins
2 eggs
2 egg whites
3/4 c. sugar
12-oz. can evaporated milk
2 c. milk
1/2 t. cinnamon
1/4 t. nutmeg
1 t. coconut extract
1 T. vanilla extract
Fill a buttered 3-quart casserole dish with bread cubes, peach slices and raisins; stir gently and set aside. Combine remaining ingredients; blend well. Pour egg mixture evenly over bread, gently stirring to coat. Bake, uncovered, at 350 degrees for 30 to 40 minutes, or until a knife inserted near the center comes out clean.
Nothing says farm-fresh flavor like dollops of whipped cream on a warm home-baked dessert. In a chilled bowl, with chilled beaters, beat a cup of whipping cream on high speed until soft peaks form. Stir in 2 teaspoons sugar and 2 teaspoons vanilla extract.
