Blackberry Fool

Serves 4 to 6

3 c. blackberries

1/2 c. sugar

1 T. water

1 T. cornstarch

2 t. lemon juice

3-oz. pkg. cream cheese, softened

1/4 c. powdered sugar

1 t. vanilla extract

1 c. whipping cream

In a large saucepan, combine blackberries and sugar. Bring to a boil over medium heat; cook for several minutes, until berries are tender. Remove from heat. Drain, discarding liquid and any seeds. Place berries in a bowl; set aside. In the same saucepan, combine water and cornstarch. Cook and stir over low heat until smooth. Add berries; cook and stir until thickened, about 5 minutes. Remove from heat; stir in lemon juice and spoon mixture into bowl. Let cool to room temperature; cover and refrigerate until chilled. Shortly before serving time, combine cream cheese, powdered sugar and vanilla in a bowl. Beat with an electric mixer on low speed until blended. Slowly add cream; beat until smooth. Spoon berry mixture into small bowls; dollop with cream cheese mixture.

Enjoy fresh berries throughout the year...freeze them during berry season! Spread ripe berries in a single layer on a baking sheet and freeze until solid, then store them in plastic freezer bags. Later, you can pour out just the amount you need.
