Makes 8 servings
1/3 c. all-purpose flour
1 c. plus 1 T. sugar, divided
1/4 c. butter
10 to 12 peaches, peeled, pitted and sliced
2 9-inch pie crusts
Optional: ice cream
Combine flour, one cup sugar and butter in a bowl. Mix until crumbly; set aside. Place one pie crust in a 9" pie plate. Arrange a layer of peaches in pie crust; sprinkle one tablespoon of flour mixture on top. Repeat layers with remaining peaches and flour mixture. Add remaining crust; flute edges and cut 4 slits in top crust to vent. Sprinkle with remaining sugar; bake at 350 degrees for 45 minutes, or until crust is golden. Serve warm, topped with a scoop of ice cream, if desired.
