Serves 8
6 c. Granny Smith apples, peeled, cored and thinly sliced
3/4 c. plus 1 t. sugar, divided
1/4 t. salt
1 t. cinnamon
1/8 t. nutmeg
2 T. all-purpose flour
2 T. lemon juice
2 9-inch pie crusts
2 T. butter, diced
1 t. milk
In a large bowl, combine apples, 3/4 cup sugar, salt, cinnamon, nutmeg, flour and lemon juice. Place one pie crust in a 9" pie plate; spoon apple mixture into crust and dot with butter. Top with remaining crust; crimp and seal edges. Make 4 cuts near center to vent. Brush with milk and sprinkle with remaining sugar. Bake at 425 degrees for 45 minutes, until crust is golden.
For a special dessert in a jiffy, soften 2 pints ice cream and spread in a graham cracker crust, then freeze. Garnish with whipped topping and cookie crumbs or fresh berries. Delicious!
