Sweet Potato Pie

Makes 8 servings

1/4 c. butter, softened

1/3 c. honey

1/8 t. salt

2 c. sweet potatoes, peeled, cooked and mashed

3 eggs, beaten

1/2 c. milk

1 t. vanilla extract

1/2 t. cinnamon

1/2 t. nutmeg

1/2 t. ground ginger

9-inch pie crust

1 c. pecan halves

Blend together butter, honey and salt in a bowl; set aside. In a separate bowl, combine sweet potatoes, eggs, milk, vanilla and spices; stir into butter mixture. Pour into pie crust; top with pecan halves. Bake at 375 degrees for 50 to 55 minutes, until nearly set in center; cool. Store in refrigerator. For the best flavor, cover and chill up to 2 days before serving.
