No-Bake Cheesecake

Makes 12 to 15 servings

2-1/2 c. graham cracker crumbs

1 c. butter, melted

2 8-oz. pkgs. cream cheese, softened

2 c. sour cream

4 t. vanilla extract

2/3 c. sugar

16-oz. container frozen whipped topping, thawed

Garnish: 21-oz. can cherry pie filling

Toss graham cracker crumbs and butter together in a bowl; press evenly into an ungreased 13"x9" baking pan. In a bowl, stir cream cheese until smooth; add sour cream, vanilla and sugar. Fold in whipped topping; spread evenly into crust. Refrigerate overnight. Garnish with pie filling before serving.

Sparkly sugared fruit garnishes are simple to make and so pretty. Simply brush strawberries or grapes with light corn syrup, then roll in super-fine sugar.
