Grandma Rene’s Crumb Cake

Makes 10 to 12 servings

2 c. brown sugar, packed

2 c. all-purpose flour

1 c. butter, softened

1 t. baking soda

1 t. salt

1 c. milk

1 t. vanilla extract

1 t. cinnamon

1/2 t. ground cloves

1/2 t. nutmeg

1 banana, mashed

1/2 c. chopped walnuts

1/2 c. raisins

Optional: whipped cream

Combine brown sugar and flour in a large bowl; set aside 1/2 cup of mixture for crumb topping. Blend butter into remaining flour mixture. In a cup, stir baking soda and salt into milk. Add milk, vanilla, spices, banana, nuts and raisins to flour mixture. Mix well until batter is slightly lumpy. Pour batter into a greased 13"x9" baking pan. Sprinkle with reserved crumb topping; do not stir. Bake at 350 degrees for 45 minutes, or until dark golden. Top with whipped cream, if desired.
