Makes about 4 dozen
2 c. sugar
1 c. shortening
2 eggs, beaten
1 c. sour cream
juice and zest of 2 oranges, divided
1 T. baking soda
5 c. all-purpose flour
2 T. baking powder
1/8 t. salt
16-oz. pkg. powdered sugar
2 T. butter, melted
In a bowl, mix sugar, shortening, eggs, sour cream and juice and zest of one orange. Sift together baking soda, flour, baking powder and salt; add to egg mixture. Drop by tablespoonfuls on ungreased baking sheets. Bake at 350 degrees for 7 to 8 minutes. To make frosting, mix together remaining zest and juice, powdered sugar and butter. Frost cookies when cool.
For orange or lemon zest in a jiffy, use a vegetable peeler to remove very thin slices of peel. Mince finely with a paring knife. A grater works well too.
