Makes about 4 dozen
3 c. all-purpose flour
1 t. cream of tartar
1 t. baking soda
1 t. salt
1 c. shortening
2 eggs, beaten
1 c. sugar
1 t. vanilla extract
Mix together flour, cream of tartar, baking soda and salt in a bowl. In a separate bowl, whisk together remaining ingredients with a fork. Stir shortening mixture into flour mixture. Wrap dough in plastic wrap; refrigerate for 30 minutes. On a floured surface, roll out dough 1/8-inch thick; cut into shapes with cookie cutters, as desired. Arrange on lightly greased baking sheets. Bake at 375 degrees for 5 to 6 minutes, until lightly golden.
Sprinkle powdered sugar on the work surface when rolling out cookie dough...so much tastier than using flour and it works just as well!
