Makes 3 to 4 dozen
1 c. sugar
1/2 c. brown sugar, packed
1/2 c. butter, softened
2 eggs, beaten
1 t. vanilla extract
1/2 t. salt
3/4 t. baking soda
1/4 t. baking powder
2 c. corn flake cereal
1-3/4 c. all-purpose flour
2 c. semi-sweet chocolate chips
1 c. sweetened flaked coconut
In a large bowl, combine sugars, butter, eggs, vanilla, salt, baking soda and baking powder; mix well. Stir in remaining ingredients. Shape into 1-1/2 inch balls; place on greased baking sheets. Bake at 375 degrees for 7 to 8 minutes. Let cookies cool slightly before removing to a wire rack.
Dress up simple cookies with a yummy glaze. Combine 1/2 cup white or semi-sweet chocolate chips with one teaspoon shortening in a microwave-safe bowl. Microwave on high for one minute, stir, then drizzle over cookies.
