How to Color Buttercream

What You’ll Need

Color swatch

I like to use a color swatch to help me achieve the color I’m looking for.

Rubber spatula

Yo’s Italian Meringue Buttercream in a bowl

Small bowl

Paring knife

Food coloring

  1    With a rubber spatula, scoop a test portion of buttercream into a small bowl. Add some food coloring using the tip of a paring knife or a drop straight from the bottle—keep note of how much you add. Stir it in until the buttercream is evenly colored and compare the color of the buttercream to the color swatch. If the color is too light, stir in more food coloring; if it’s too dark, stir in more uncolored buttercream to dilute the color.

That’s why it’s important to test in a smaller bowl first!

  2    When you’re happy with the color of the test portion, try to recreate that same color with the remaining buttercream. Add coloring a little at a time and stir until the color is thoroughly blended in, making sure to scrape the sides and bottom of your bowl.

  3    Add the test portion of the buttercream into your large bowl and compare the color of the buttercream to the color swatch. Add more food coloring if needed.

It’s important to test your color in a smaller bowl first because it allows you determine if you’ve chosen the right food coloring for your desired hue. At this point you may want to switch coloring or combine colors to get things just right.
