Simple Bolognese

Ingredients

- 2 onions medium onion coarsely chopped
|
|
|
- 1/4 cup garlic peeled and coarsely chopped
|
|
|
- 2 stalks celery coarsely chopped
|
|
|
- 1/2 cup olive oil extra-virgin olive oil
|
|
|
- 2 carrots carrot coarsely chopped
|
|
|
- 2 pounds beef ground chuck beef
|
|
|
- can crushed tomatoes One 28-ounce crushed tomatoes
|
|
|
- 1/2 cup parsley flat-leaf Italian parsley chopped
|
|
|
- 2 1/4 cups basil fresh basil chopped
|
|
|
- black pepper Salt and freshly ground black pepper
|
|
|
- 1/2 cup freshly grated Pecorino Romano
|
|

Directions
Step 1 In a huge skillet heat the essential olive oil.
Step 2 When almost smoking, add the onion and garlic and saute over medium heat before onions become very soft about 8 minutes.
Step 3 Add the celery and carrot and saute for five minutes. Raise heat to high and add the bottom beef.
Step 4 Saute, stirring frequently and splitting up any large clumps, and cook until meat is no more pink, about ten minutes.
Step 5 Add the tomatoes, parsley, and basil and cook over medium-low heat before sauce thickens. Season with salt and pepper. This will need approximately 1/2 hour.
Step 6 Finish bolognese with Pecorino Romano.
