STRAWBERRY & PASSION FRUIT YOGURTS

If you want a light, sweet-tasting snack, these little jars full of summery freshness will give you an instant boost.

SERVES: 4     PREP: 20–25 MINS, PLUS COOLING     COOK: 2–3 MINS

¼ cup dried coconut flakes

8 ounces strawberries, hulled finely grated zest and juice of 1 lime

1½ cups fat-free Greek-style yogurt

4 teaspoons honey

2 passion fruit, halved

1 tablespoon coarsely chopped dried goji berries

1. Add the coconut to a dry skillet and cook over medium heat for 2–3 minutes, shaking the pan, until light golden. Remove from the heat and let cool.

2. Coarsely mash the strawberries and mix with half the lime juice.

3. Add the lime zest, remaining lime juice, the yogurt, and honey to a bowl, and stir together. Add three-quarters of the cooled coconut to the yogurt, then scoop the seeds from the passion fruit over the top and lightly fold into the yogurt.

4. Layer alternate spoonfuls of strawberry and yogurt in four 8-ounce jars, then sprinkle with the remaining coconut and the goji berries. Tightly seal the jars and chill until ready to serve. Eat within 24 hours.
