RUBY FRUIT JUICE

There’s nothing more refreshing than locally grown strawberries in the summer, but this smoothie can be enjoyed at any time of year.

SERVES: 1     PREP: 15 MINS     COOK: NO COOKING

1 ruby grapefruit, zest and a little pith removed, seeded and coarsely chopped

¼ cucumber, coarsely chopped

1 cup hulled strawberries small handful of crushed ice (optional) 3.4g protein

1. Put the grapefruit and cucumber into a blender and blend until smooth.

2. Add the strawberries and crushed ice, if using, and blend again until combined.

3. Pour into a glass and serve immediately.
