YOU KNOW THAT “UH-OH, I haven’t been sleeping or drinking any water or eating any vegetables and now my throat feels sore—OH GOD I CAN’T GET SICK I DON’T HAVE TIME TO BE SICK” feeling? Yeah. Reach for this.
It’s super simple. Just throw the ingredients in the jar before you run out the door, then add hot water when you get to school or work. It’s also packed with vitamins and minerals that your body needs to stay healthy and productive.
You don’t need to use everything in this recipe—just put in what you have on hand. Kelp noodles are admittedly a little weird at first—they don’t have a lot of flavor, but they have a nice little crunch and are a rich source of all those minerals your body is craving.

Inactive time: 20 minutes
3 or 4 dried mushrooms
1 cup kelp noodles
2 tablespoons kimchi or sauerkraut
½ teaspoon miso paste (or vegetarian bouillon paste)
¼ cup arame or hijiki seaweed
2 tablespoons chopped scallion
1 teaspoon grated fresh ginger
1 teaspoon chopped garlic
Juice of 1 lemon
Hot water
1. Soak the mushrooms in room-temperature water for at least 20 minutes, then give them a quick rinse to remove any residual grit; drain well.
2. Put the mushrooms and all the remaining ingredients except the water in a pint-sized glass jar.
3. Add enough hot water to fill the jar and let sit for 1 to 2 minutes, stirring occasionally.
4. Drink straight from the jar or eat with a spoon.
