If you love pumpkin spice, now you can have your latte and eat it, too. Don’t miss out on the craze just because you don’t drink coffee. Make this morning treat and see for yourself what all of the fuss is about.

1 Grease a 7-cup glass dish. Add bread. Set aside.
2 In a medium bowl, whisk together milk, coffee, eggs, pumpkin purée, vanilla, maple syrup, pumpkin pie spice, and salt. Pour over bread; place pats of butter on top.
3 Pour water into Instant Pot®. Set trivet in Instant Pot®. Place glass dish on top of trivet. Lock lid.
4 Press the Manual button and adjust time to 20 minutes. When the timer beeps, quick-release the pressure until float valve drops and then unlock lid.
5 Remove glass bowl from the Instant Pot®. Transfer to a rack until cool. Serve.
INSTANT POT® OPTIONS
If you’d like, feel free to finish off this casserole with any number of toppings. Serve it with powdered sugar or fresh whipped cream. You can also substitute pumpkin butter for the regular pats of butter to really drive home this dish’s pumpkin power.
