Heirloom Tomato Basil Soup

If you love tomato soup, this dish is going to make your day. And if you’d like to make this soup even better, top it with grilled-cheese croutons. Make a grilled-cheese sandwich as you normally would and then cut the sandwich into little squares. Float these glorious croutons atop your soup and enjoy this new twist on an old classic.

1 Press the Sauté button on the Instant Pot® and heat the oil. Add the onion and celery and sauté for 3–5 minutes until the onions are translucent. Add the tomatoes. Continue to sauté for 3 minutes until tomatoes are tender and start to break down. Add basil, salt, and broth. Lock lid.

2 Press the Manual button and adjust time to 7 minutes. When timer beeps, quick-release pressure until float valve drops and then unlock lid.

3 Add heavy cream and pepper. In the Instant Pot®, purée soup with an immersion blender, or use a stand blender and purée in batches. Ladle into bowls and serve warm.
