Broccoli Cheddar Soup

This soup is such an easy way to get some of your picky eaters to eat their broccoli, and it’s so delicious that it just flies out of the pot. Thank goodness the Instant Pot® can make this Broccoli Cheddar Soup in minutes, because your family and guests will be screaming for seconds—and maybe thirds!

• Cook Time: 25 minutes

1 Press the Sauté button on the Instant Pot® and heat the butter. Add onion, carrot, and garlic. Sauté for 5 minutes until the onions are translucent. Add the broccoli. Continue to sauté for 3 minutes until broccoli starts to become tender. Add wine, broth, salt, pepper, and nutmeg. Press the Adjust button to change the temperature to Less and simmer for 5 minutes. Lock lid.

2 Press the Manual button and adjust time to 10 minutes. When timer beeps, quick-release pressure until float valve drops and then unlock lid.

3 Add milk and cheese. In the Instant Pot®, purée the soup with an immersion blender, or use a stand blender and purée in batches.

4 Ladle into bowls and serve warm.
