Cabbage and Smoked Sausage Soup

If you’re looking for a quick Oktoberfest meal, you’ve found it. This tasty soup has all of the staples of a German meal: sausage, cabbage, beer, mustard, potatoes, and heartiness. Nothing soothes the soul better than this warm bowl of soup.

1 Press the Sauté button on the Instant Pot® and heat the olive oil. Add the onion, carrot, and celery. Sauté for 3–5 minutes until onions are translucent. Add potatoes and sausage. Continue to stir-fry for an additional 3 minutes until potatoes start to brown.

2 Add lager to the Instant Pot® and deglaze by scraping the brown bits from the edges of the Instant Pot®. Press the Adjust button to change the temperature to Less and simmer unlidded for 5 minutes. Add broth, mustard, tomatoes, cabbage, caraway seeds, salt, and pepper. Lock lid.

3 Press the Soup button and adjust the time for 20 minutes. When timer beeps, let pressure release naturally for 10 minutes. Quick-release any additional pressure until float valve drops and then unlock lid.

4 Ladle into bowls and serve warm.
