Loaded Potato Soup

This Loaded Potato Soup is stick-to-your ribs tasty on its own, but it’s even more so when you top it with garnishes that you let your guests personalize. Set out a garnish station so your guests can load their potato soup with their favorite toppings chosen from crumbled bacon, shredded sharp Cheddar cheese, chopped green onions, or a dollop of sour cream.

1 Press the Sauté button on the Instant Pot® and stir-fry the bacon until almost crisp. Add the butter, onion, and carrot. Sauté for 3–5 minutes until the onions are translucent. Add garlic and sauté for an additional minute. Add potatoes. Continue to sauté for 2–3 minutes until potatoes are browned. Add in broth, salt, pepper, and nutmeg. Lock lid.

2 Press the Soup button and adjust the time for 20 minutes. When timer beeps, quick-release pressure until float valve drops and then unlock lid.

3 Add the milk. In the Instant Pot®, purée the soup with an immersion blender, or use a stand blender and purée in batches. Ladle into bowls and serve warm.
