Creamy Chicken and Broccoli over Rice

The Italian-seasoned coating on this chicken not only allows the chicken to be flavorful, but some of the flour will fall off during the cooking process and will work to thicken the cream, giving it a luxurious, creamy mouthfeel.

1 In a small bowl, combine flour, salt, pepper, and Italian seasoning. Add chicken to seasoning mix and toss to coat. Set aside.

2 Press the Sauté button on the Instant Pot® and heat oil. Cook onions for 3–5 minutes until translucent. Add rice and toss to combine.

3 Add chicken in an even layer over ingredients in Instant Pot®. Gently pour in broth and water. Lock lid.

4 Press the Multigrain button (the Instant Pot® will determine the cooking time, but wild rice takes about 40 minutes pressurized cooking time). When the timer beeps, let pressure release naturally for 10 minutes. Quick-release any additional pressure until float valve drops and then unlock lid. Add broccoli. Stir. Add cream and Parmesan cheese. Stir. Allow mixture to thicken unlidded in Instant Pot® for 5 minutes.

5 Transfer to a serving dish and serve warm.
