1 Rinse and drain beans.
2 Press the Sauté button on Instant Pot® and heat olive oil. Add bacon and bell pepper. Stir-fry 3–5 minutes until bacon is cooked. Add broth and deglaze the Instant Pot® by scraping the sides and bottom of the Instant Pot®.
3 Add beans, garlic powder, coriander, chili powder, cumin, salt, and cilantro. Lock lid.
4 Press the Bean button and cook for the default time of 30 minutes. When timer beeps, let pressure release naturally for 10 minutes. Quick-release any additional pressure until float valve drops and then unlock lid.
5 Discard bacon. Press the Sauté button on the Instant Pot®, press the Adjust button to change the heat to Less, and simmer bean mixture unlidded for 10 minutes to thicken. Remove mixture to a large bowl. Once cool enough to handle, quickly mix in egg and bread crumbs.
6 Form into 16 equal-sized small patties. Cook on stovetop in a skillet for approximately 2–3 minutes per side until browned.
7 Remove from heat and add each patty to a bun. Serve warm.
INSTANT POT® OPTIONS
If you want to spice up your Black Bean Sliders, just add a dollop of this Quick Chipotle Mayonnaise. In a small food processor, pulse together 1 cup mayonnaise, 1/4 cup sour cream, 2 chipotles in adobo sauce, 1 tablespoon lime juice, and a pinch or two of salt. Refrigerate overnight until ready to serve.
