Classic Baba Ghanoush

This Mediterranean classic is a healthy alternative to the mayonnaise-based dips that you will frequently find at parties. Serve this with pita chips, crudités, or crostini and make your guests happy!

1 Press the Sauté button on Instant Pot®. Heat sesame oil. Add eggplant and stir-fry for 4–5 minutes until it softens. Add garlic and cook for an additional minute. Add water. Lock lid.

2 Press the Manual button and adjust time to 4 minutes. When timer beeps, let pressure release naturally until float valve drops and then unlock lid.

3 Strain the cooked eggplant and garlic. Add to a food processor or blender along with 1/8 cup parsley, cumin, salt, lemon juice, and tahini. Pulse to process. Add the olive oil and process until smooth. Transfer to a serving dish and garnish with remaining 1/8 cup chopped parsley and sprinkle with paprika.
