Salsa Verde

Made primarily from tomatillos, Salsa Verde, or “green sauce,” is terrific served with chicken enchiladas or even fish tacos. It is also a quick go-to dip served with tortilla chips.

• Hands-On Time: 5 minutes

• Cook Time: 2 minutes

1 Cut the tomatillos in half and place in Instant Pot®. Add enough water to cover the tomatillos. Lock lid.

2 Press the Manual button and adjust time to 2 minutes. When timer beeps, let pressure release naturally until float valve drops and then unlock lid.

3 Drain Instant Pot®. Add tomatillos, jalapeños, onion, cilantro, coriander, sea salt, and 11/2 cups water to a food processor or blender. Pulse until well combined, about 1–2 minutes.

4 Transfer to a serving dish and chill covered before serving.
