Garlic and Chive Home Fries

These amazing Garlic and Chive Home Fries are great in their very own bowl or alongside a simple and tasty beef dish. You can peel the potatoes if you’d prefer, but leaving the skin on lends a rustic feel to this dish and makes it easier to prepare. You can serve this either way, but no matter what you choose this delicious recipe transforms the simple potato into a side dish that everyone will enjoy.

• Hands-On Time: 5 minutes

• Cook Time: 10 minutes

1 Place a metal steamer into your Instant Pot®. Pour in chicken broth. Add potatoes to the steamer. Lock lid.

2 Press the Manual button and adjust time to 5 minutes. When timer beeps, let pressure release naturally for 10 minutes. Quick-release any additional pressure until float valve drops and then unlock lid.

3 Remove potatoes and steamer from the pot. Set potatoes aside. Discard broth.

4 Press the Sauté button on the Instant Pot®. Heat ghee. Add the potatoes and stir-fry for 3–5 minutes until browned. Add garlic and heat an additional minute. Transfer potatoes to a bowl and toss with paprika, salt, and pepper. Garnish with chives and serve warm.
