Diced Turnips and Greens

Don’t forget about the incredibly nutritious turnip greens tops when cooking turnips. The saltiness of the ham hock adds a happy dimension to this dish, and the vinegar helps combat the natural bitterness of the greens. The touch of honey rounds out that saltiness, acidity, and bitterness, making this a completely balanced side dish.

1 Wash turnips. Peel and dice. Wash turnip greens. Cut out stems and spines. Dice leaves.

2 Place all ingredients in Instant Pot®. Lock lid.

3 Press the Manual button and adjust time to 10 minutes. When timer beeps, let the pressure release naturally until float valve drops and then unlock lid. Remove ham hock, pull meat off of the bone, and dice. Add meat back to Instant Pot®. Discard bone.

4 Using a slotted spoon, transfer turnip greens, turnips, and ham to a serving dish. Serve warm.
