Chicken Marinara and Zucchini

Do you ever have those days when you just need to throw a meal together on the fly? Whether you use homemade or jarred marinara sauce, this quick meal uses what you already have on hand, turning basic ingredients into an Italian dream in minutes on the hour.

1 Scatter zucchini into Instant Pot®. Place chicken on zucchini. Pour marinara sauce over chicken. Sprinkle with Italian seasoning and salt. Lock lid.

2 Press the Poultry button and cook for the default time of 15 minutes. When timer beeps, let pressure release naturally for 10 minutes. Quick-release any additional pressure until float valve drops and then unlock lid. Check chicken using a meat thermometer to ensure the internal temperature is at least 165°F.

3 Sprinkle chicken with mozzarella. Press Keep Warm button, lock lid back in place, and warm for 5 minutes to allow the cheese to melt.

4 Transfer chicken and zucchini to a serving platter.
