This island-inspired pulled pork is fantastic on its own or when served on slider buns, flour tortillas, or lettuce wraps. For even more flavor, add avocado slices, grated cheese, sliced radishes, or sour cream. The recipe may look like it contains a lot of ingredients, but don’t be intimidated. You probably have most of these spices already on your spice rack.

1 Dry pork butt with paper towels and set aside.
2 For Dry Rub: In a small bowl, combine Dry Rub ingredients. Massage rub into all sides of the pork. Refrigerate covered for 1 hour up to overnight.
3 For Sauce: Combine Sauce ingredients in a small saucepan. Bring to a boil. Reduce heat and simmer for 10 minutes until sauce reduces by a quarter and starts to thicken. Let cool for 5 minutes. Add to a food processor and pulse until smooth.
4 Place the pork butt in the Instant Pot® and pour the sauce over the meat. Lock lid.
5 Press the Manual button and adjust time to 85 minutes. When timer beeps, let the pressure release naturally until float valve drops and then unlock lid. Check the pork to make sure it can easily pull apart. If not, press the Sauté button and simmer unlidded for an additional 10 minutes.
6 With the meat still in the Instant Pot®, use two forks and pull pork apart. Remove bone and discard. Stir pork with sauce in the Instant Pot®. Serve using a slotted spoon.
