Cowboy Baby Back Ribs

These Instant Pot® ribs are amazingly juicy due to the pressure and constant steam in the pot. Don’t skip the coffee crystals with this rustically charming recipe. It adds a beautiful earthiness to the ribs. If you want a little caramelization to the ribs, throw them on the grill or under a broiler for a couple of minutes until browned on each side.

1 Cut ribs into 2-rib sections. In a small bowl, combine coffee, salt, chili powder, cumin, cayenne pepper, mustard, garlic powder, onion powder, and coriander. Using your hands, rub this mixture into the rib sections. Refrigerate covered for 30 minutes up to overnight.

2 In a small mixing bowl, whisk together maple syrup, soy sauce, apple cider vinegar, and tomato paste.

3 Press the Sauté button on Instant Pot®. Heat olive oil. Add onions and sauté for 3–5 minutes until onions are translucent. Add the maple syrup mixture. Using tongs, add a few ribs at a time and gently coat them in sauce. Arrange ribs standing upright with the meaty side facing outward. Lock lid.

4 Press the Manual button and adjust time to 25 minutes. When the timer beeps, let pressure release naturally until float valve drops and then unlock lid. Serve warm.
