The flavors in this recipe are so sophisticated that your guests will never know you took less than 30 minutes to whip up this juicy masterpiece. Figs—a superfood high in potassium and fiber—are one of those underused fruits that pair so nicely with pork chops and a good wine that you may never pay for fine dining again.

1 Pat the pork chops dry with a paper towel and season both sides liberally with salt and pepper. Set aside.
2 In a small bowl, whisk together vinegar, broth, and mint. Set aside.
3 Press the Sauté button on the Instant Pot®. Heat oil. Brown pork chops for 5 minutes per side. Remove chops and set aside.
4 Add vinegar mixture and deglaze the Instant Pot® by scraping the brown bits from the sides and bottom of the Instant Pot®. Layer the onions into the pot, then scatter the pears and figs over onions. Place pork chops on top. Lock lid.
5 Press the Steam button and adjust time to 3 minutes. When the timer beeps, let pressure release naturally for 10 minutes. Quick-release any additional pressure until the float valve drops and then unlock lid.
6 Using a slotted spoon, transfer pork, onions, figs, and pears to a serving platter. Serve warm.
