Meatloaf is a worldwide tradition. It seems that every country in the world has a variation on this simple dish. As long as you have some form of ground meat, vegetables, and a binding agent, a meatloaf can be made. This Quick and Easy Meatloaf is the perfect weeknight staple, especially when served with potatoes and vegetables.

• Cook Time: 35 minutes
1 Using your hands, in a large bowl combine all ingredients except the broth.
2 Form mixture into a ball, flatten the top, then place meatloaf into a 7-cup glass dish.
3 Add beef broth to the Instant Pot®. Insert trivet. Place glass dish on top of the trivet. Lock lid.
4 Press the Meat button and cook for the default time of 35 minutes. When timer beeps, let pressure release naturally for 10 minutes. Quick-release any additional pressure until float valve drops and then unlock lid.
5 Remove meatloaf from Instant Pot® and let cool at room temperature for 10 minutes. Tilt glass bowl over the sink and pour out any liquid/rendered fat. Slice and serve.
Utensil Hacks
You may want to fashion an aluminum foil sling for easy retrieval if you don’t have a pair of plate retriever tongs. Take an approximate 10" × 10" square of aluminum foil and fold it back and forth until you have a 2" × 10" sling. Place sling under the bowl or pan before cooking so that you can easily lift up the heated dish when cooking is complete.
