Mahi-Mahi with a Lemon-Caper Butter Sauce

Mahi-mahi is a firm fish that works well as a vessel for whatever flavors you cook it with. It is mild in taste and doesn’t have that “fishy” flavor that you get when you use tuna or salmon.

• Hands-On Time: 5 minutes

• Cook Time: 7 minutes

1 Place a piece of foil on the Instant Pot®’s steamer basket. Set both fillets on the foil. Create a “boat” with the foil by bringing up the edges. Pour lemon juice on fish. Add capers. Season fish with salt and zest. Add a pat of butter to each fillet. Set trivet in the Instant Pot® and place the steamer basket on the trivet. Lock lid.

2 Press the Manual button and adjust time to 7 minutes. Quick-release pressure until float valve drops and then unlock lid.

3 Transfer fish to two plates. Garnish each with 1/2 tablespoon chopped parsley.
