Creole seasoning is a somewhat vague ingredient on this recipe list. Look in your local grocer’s spice aisle and there will be several versions. Choose the one that speaks to you as you just can’t go wrong with these beautiful spice blends.

• Hands-On Time: 10 minutes

• Cook Time: 20 minutes

1 Press Sauté button on Instant Pot®. Heat oil and add onion, celery, and bell pepper. Sauté for 3–5 minutes until onions are translucent and peppers are tender.

2 Stir in undrained tomatoes, water, tomato paste, honey, basil, and Creole seasoning.

3 Sprinkle fish with salt and pepper. Gently toss the fish pieces into the sauce in the Instant Pot®. Lock lid.

4 Press the Manual button and adjust time to 5 minutes. When timer beeps, quick-release the pressure until float valve drops and then unlock lid.

5 Transfer fish to a serving platter. Press Sauté button on Instant Pot®, press Adjust button to change the temperature to Less, and simmer juices unlidded for 10 minutes. Transfer tomatoes and preferred amount of sauce over fish. Serve immediately.
