Millet Eggplant Pilaf

This twist on a traditional rice pilaf side dish is hearty enough to serve as a complete meal. Among other properties, millet provides protein and is a good source of magnesium. The eggplant provides a great source of fiber and adds a meatiness to the dish. In addition, the flavors are brought together in just minutes.

1 Press Sauté button on Instant Pot®. Add butter and melt. Add onion and cook 3–5 minutes until translucent. Toss in eggplant and stir-fry for 2 more minutes. Add diced tomato.

2 Add millet to Instant Pot® in an even layer. Gently pour in broth. Lock lid.

3 Press the Rice button (the Instant Pot® will determine the time, about 10 minutes pressurized cooking time). When timer beeps, let pressure release naturally for 5 minutes. Quick-release any additional pressure until float valve drops and then unlock lid.

4 Transfer pot ingredients to a serving bowl. Season with salt, pepper, saffron, and cayenne pepper. Garnish with chives.
