This flavorful mash of root vegetables is a perfect accompaniment to roasted meats and even the Mighty “Meat”loaf (see recipe in this chapter). Enjoy this in a spoon or on a pita crisp as an appetizer.

1 Press the Sauté button on Instant Pot®. Heat 1 tablespoon olive oil. Toss turnips and carrots in oil for 1 minute. Add broth. Lock lid.
2 Press the Manual button and adjust time to 8 minutes. When timer beeps, quick-release pressure until float valve drops and then unlock lid.
3 Drain vegetables and reserve liquid; set liquid aside. Add 2 tablespoons of reserved liquid plus remaining ingredients to vegetables in the Instant Pot®. Use an immersion blender to blend until desired smoothness. If too thick, add more liquid 1 tablespoon at a time. Serve warm.
