Beef Carnitas

Makes 6 servings

2 pounds lean stew beef, cut into 1/2" pieces

3/4 cup mild salsa

2 tablespoons chopped chipotle chile peppers in adobo sauce

1/2 teaspoon salt

1/8 teaspoon ground black pepper

1 cup beef broth or water

1. Combine the beef, salsa, chile peppers, salt, black pepper, and beef stock in a 4- to 6-quart slow cooker.

2. Cover and cook on low for 6 to 8 hours, or until the beef is very tender.
