Alsatian Smoked Pork Chops and Sauerkraut

Makes 6 servings

2 pounds smoked pork chops

1 bag (2 pounds) refrigerated sauerkraut, rinsed and drained

3/4 pound small red potatoes

1/2 cup baby carrots

1/2 cup chopped onion

1 cup fruity white wine

1 teaspoon ground black pepper

1 teaspoon dried thyme

1. Coat a 4- to 6-quart slow cooker with cooking spray. Cut the pork, if necessary, into pieces that fit into the pot. Place the pork, sauerkraut, potatoes, carrots, onion, wine, pepper, and thyme in the pot.

2. Cover and cook on low for 8 to 9 hours or on high for 4 to 5 hours, or until a thermometer inserted in the center of a chop registers at least 160°F.
