ABOUT THE AUTHORS

Rosanna Nafziger Henderson grew up on a mountain in West Virginia. She spent her girlhood working in the orchard, planting beans, and selling pies at the farmers’ market. Now she translates the traditions of her Appalachian Mennonite upbringing to the urban household on her blog, Paprikahead. A chef, nanny, and editor, she lives with her husband in San Francisco.

Ken Albala is Professor of History at the University of the Pacific in Stockton, California. He has written numerous books on topics ranging from Renaissance dietetics and courtly dining to beans and pancakes. He has also edited a handful of food reference works and essay collections, several scholarly food series, and coedits the journal Food, Culture and Society.
