“Meaning of Life” Chicken Salad

6 chicken breasts, cooked and shredded

1 1/2 cups mayonnaise

Salt

1 cup toasted pecans

1 1/2 cups red seedless grapes, cut in half

Combine mayonnaise and salt (to taste). Add shredded chicken with enough of the mayonnaise to cover, then add pecans and grapes. Serve at room temperature on a bed of lettuce or croissants.

“Miracle” Chocolate Chip Muffins

2 large eggs

2 cups sour cream

1 cup milk

3 1/2 cups all-purpose flour

4 Tbsp. sugar

2 tsp. baking powder

1 tsp. baking soda

1 tsp. salt

2 cups (1 12-ounce bag) chocolate chips

In a bowl, beat eggs. Stir in sour cream and milk. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Pour egg mixture into flour mixture and stir just until moistened. Fold in chocolate chips. Spoon batter into greased muffin tin, filling cups three-quarters full. Bake in 400-degree oven for 20 to 25 minutes.

“Comfort Food” Custard Pie

1 unbaked pie shell

3 large eggs

½ cup sugar

½ tsp. salt

½ tsp. nutmeg

2 2/3 cup milk

1 tsp. pure vanilla extract

Preheat the oven to 350 degrees. Beat eggs slightly, then add sugar, salt, nutmeg, vanilla, and milk. Beat well and pour into the unbaked pie shell. Bake for 35 to 40 minutes. Remove from oven and cool. Sprinkle the top of pie with nutmeg and serve.
