Make the falafel, salad, and sauce from our Baked Falafel Pitas with Chopped Greek Salad and Roasted Cashew Sauce (page 146). Brush rolled-out pizza dough with 1 tbsp olive oil mixed with 1 large pressed garlic clove. Bake the dough in a preheated 500°F/260°C/gas 10 oven for about 10 minutes, until the crust just begins to turn golden. Remove the crust and top with bite-size pieces of falafel, and return to the oven for another 2 minutes or so, until the falafel is warmed through and the crust is golden brown and crispy. Generously drizzle the pizza with the cashew sauce, and then top with the Greek Salad. Serve immediately.
