PROJECT: SHINY-COAT TREATS

As dogs age, their coats and skin can become dry. Flaxseed meals and oils are a great source of omega-3 fatty acids, which may be beneficial to the health of your dog’s skin and coat. Flaxseed meal is extremely perishable and should be stored in the refrigerator and consumed quickly upon opening. Flaxseed oil should not be heated, but added directly to food. This recipe calls for locally harvested honey. Beekeepers work hard to maintain crucial bee populations that are damaged by the overuse of toxic herbicides and pesticides and by urbanization, so do try to support their efforts. (For humans, local honey is said to be beneficial to allergy sufferers in the area from which it is harvested, so you’ll benefit as well.)

1 cup organic whole-wheat flour

• ¼ teaspoon salt

4½ tablespoons flaxseed meal

1 organic egg, preferably from a local source

1 tablespoon locally harvested honey

Image cup organic beef or chicken stock (homemade, if possible)

01. Preheat the oven to 400°F. Grease a baking sheet with butter or a little oil. In a bowl, mix together the flour, salt, and flaxseed meal. In another bowl, combine the egg and honey. Stir the flour mixture into the egg mixture and add stock until the dough has the consistency of drop biscuits. Drop heaping tablespoons of the dough onto the baking sheet, leaving about 1 inch between biscuits. Bake for about 15 minutes. Remove, cool on a wire rack, and store, tightly covered, in a glass or ceramic container for up to a week or in the freezer for up to three months.
