Gluten-free, vegan, no sodium

Serves 4
1 cup fresh mint leaves, rinsed very well
3 limes, sliced into thin wedges
Ice to preference
1 liter lime seltzer (no sodium added)
1. Put the mint leaves at the bottom of a pitcher.
2. Using a wooden spoon, squish the mint up a bit. It doesn’t have to be pulverized—the goal is to release the minty essence without everyone getting little green bits in their teeth.
3. Add the lime wedges and ice.
4. Pour the seltzer over the ice.
5. Stir lightly.
6. Serve in tall glasses.
